What will you study?

This course at Bournemouth University is specifically designed for students with appropriate existing qualifications (such as a Canadian Community College Diploma) in Hospitality, Tourism or allied subjects to continue their studies to degree level. It develops graduates with the managerial skills and knowledge necessary to succeed in these dynamic and challenging international industries.

As well as gaining a better understanding of hospitality and tourism management, students will be guided in developing your ability to evaluate and analyze and to apply your knowledge in innovative ways. The core of the course focuses on strategic management subjects taught in the context of hospitality and tourism and on research methods with expert academic support given for your dissertation.

Course Content

Core units

  • Dissertation

A major piece of individual research work investigating a relevant topic of your choice. This involves the collection, interpretation, analysis and appropriate presentation of data, and the ability to relate the key findings to existing knowledge and understanding within the subject area of the dissertation using a sustained and balanced argument.

  • Customers, Marketing Communications & Social Media

This unit aims to develop further an appreciation of marketing communications and how they are employed in influencing consumer and corporate purchases and to examine critically integration of communication plans with reference to selling hospitality and tourism products in an international market.

  • Leadership in Hospitality

The aim of this unit is to develop the confidence and ability to review and analyse (primarily) hospitality organizations using a wide range of conceptual models which will allow you to understand and explain the rationale and logic of strategic and tactical decisions and developments.

  • Global Hospitality & Tourism Issues

The aim of this unit is to develop a global appreciation of management issues relating to the hospitality and tourism industries. The rationale for this unit is to provide a forum in which you can test ideas and concepts against the evidence provided by informed sources.

This unit provides information through which you can develop your understanding of the complexities of the conferencing and events industries in economic and operational terms, and the application of issues that are integral to the day-to-day management of events and conferences.

  • Financial Management

This unit provides an opportunity to study the area of financial management, building on your earlier studies in finance and accounting. It will provide you with an appreciation of how financial decisions are made in organizations, within the context of corporate strategy.

  • Food, Culture & Travel

This unit is designed to allow you to explore the complex relationships between food and culture within an international context. It approaches food and culture from a commercial tourism and hospitality context as well as from a social and domestic context. It brings to bear a review on many aspects of food studies and encourages vigorous debate on a wide range of topics.

  • Food Innovations

This unit aims to investigate the creative and practical process involved in the development of new food products into the retail or hospitality environment. Opportunities to think creatively about current and future food issues and to solve problems in an innovative way are at the heart of this unit.

  • Leisure, Tourism, Events & Climate Change

The relationship between leisure, tourism, events and climate change is well established. It is a two way relationship as leisure and tourism is weather dependent and the industry has to adapt to the changing climate and the industry itself makes a significant contribution to greenhouse gas emissions and climate change. This unit will explore in detail both relationships exploring how the industry adapts to climate change and how it can mitigate its contribution.

  • Media, Tourism & Leisure

This unit aims to develop appreciation of the relevance and applications of a critical understanding of media practices and discourses to the field of leisure and tourism.

  • Professionalism & Leadership

This unit will help students improve your levels of professionalism through personal introspection, peer group feedback and experiential learning. It will provide a practical, action based learning forum, in which you can analyze theories and concepts of ‘professionalism’, individual leadership and management and directly test your individual response to situations in which they might encounter or use such approaches. It aims to assist you in gaining access to enhanced development opportunities within large companies and large company training schemes.


This course is assessed through the use of a mixture of coursework assignments and end of year examinations.
